In quantum entanglement, why is the unobserved, unprovable "wave-function collapse" theory preferred over...?

Ah... but there is proof of wave functions. The split screen experiment using electrons will form interference patterns even though single electrons over a period of time are released. These bands clearly show the wave nature of single particles, which is what the wave functions are all about.
